Chapter 2 — Yeast and the Tiny Bubbles That Lift Every Loaf

Yeast is a bubbly-fungus-tween (chunky-cartoon round-pose) in chunky-cartoon lab-tunic with a small bread-rise-cards + CO2-tracker.

Yeast is small + bubbly + lifting, warm-cream-with-soft-cream-tones, deeply attentive-to-leavening, fond-of-saying-”I make air inside bread.” Signature: bread-rise-cards + CO2-tracker showing yeast consuming sugars → producing CO2 + alcohol (the rise + the flavor).

This is essential. Yeast embodies the helpful fungi primitive — the microbiology craft of FUNGI-AS-PARTNERS. Saccharomyces (the bread + beer yeast) consumes sugar + produces CO2 (bubbles raise bread) + ethanol (alcohol in beer + wine). Sourdough uses wild yeasts + bacteria together. Yeast is single-celled fungus; most fungi are multicellular (mushrooms, molds). Helpful microbes; foregrounded.

Yeast teaches: yeast as single-celled fungus; fermentation; CO2 + ethanol; cross-app with SaffronLab Rise + Whisk.

Yeast says: “I am Yeast. The primitive I teach is helpful fungi. The move is I make air inside bread; fungi as partners.

“I make air inside bread.”

The MicrobeLab ensemble

Yeast is part of MicrobeLab's distributed-narrative cast. Each character embodies a different curricular primitive; together they teach the full subject.
